February is National Hot Breakfast Month!!  *Woot woot!*  So to celebrate, Krusteaz is encouraging us to have breakfast for dinner once a week.  We all know how putting dinner on the table every night can be stressful, so one way to ease this challenge is to serve up breakfast for dinner once a week.

I probably don’t even to twist your arm, besides breakfast for dinner has been popular ever since I can remember. I remember my mom said her mom would often make breakfast for dinner.  She had 14 brothers and sisters, which is like whoa!! Right?

My mom would make pancakes for dinner as a special treat when dad would go out of town for business trips. She made the most amazing, vanilla simple syrup–that was too die for.  It soaked the pancakes and with the most amazing vanilla flavor and it is my absolute favorite way to eat them.

You can not go wrong with good old-fashioned buttermilk pancakes, so I made those for our ‘breakfast for dinner’ and I also had an intense, hankering for some peanut butter pancakes.

I made those by adding in some peanut butter and vanilla extract to the pancake batter.  The peanut butter adds a subtle nutty flavor to them, BUT…

For even more peanut butter…I made a super easy 2-ingredient peanut butter maple syrup and if you’re feeling a little daring, add some chocolate chips, raspberry or strawberry preserves, chocolate syrup and/or whipped cream!  These are great with just maple syrup too.

The pancakes were so light and fluffy, just the way you would expect. 🙂  Soo good!  They are great for refrigerating and freezing for later and I always make extra for this reason.

Peanut Butter Maple Syrup

How to Make Peanut Butter Pancakes

Peanut Butter Pancakes

  1. Melt peanut butter in microwave for 30 seconds or until melted.
  2. Mix all ingredients in a large bowl. Batter will be slightly lumpy.
  3. Let batter sit for 2 minutes.
  4. In meantime, lightly grease griddle and start preheating to 375 degrees. You can also use a non-stick fry pan using medium-high heat.
  5. With a ¼ cup dry measuring cup, scoop batter onto griddle.
  6. Cook pancakes 1 – 1 ½ minutes per side, or until golden brown, turning only once.

Peanut Butter Maple Syrup

  1. In microwave safe bowl or measuring cup, combine peanut butter and syrup.
  2. Microwave for 30 seconds, then stir.
  3. Microwave thirty seconds more and stir until creamy and well combined.
  4. Pour syrup between layers of pancakes and devour!!

  1. For breakfast type food, I like the Chocolate Chip Pancake Mix. Around the holidays I use their Pumpkin Bread mixes a lot. Super good.

  2. We all have our favorites in our family the cinnamon pancakes, and the bacon pancakes seem to be the all time favorite, Krusteaz is a staple in my cupboard. We eat a lot of muffins, pancakes, and Waffles– Its one of the best meals any time of the day or night.

  3. My granny would make buttermilk pancakes from scratch every weekend I would visit. She would pour Maple Pecan syrup over my pancakes and I would devour them wanting more. My momma has the tradition now but instead of pancakes, she makes the best blueberry/blackberry Belgium Waffles with Blueberry syrup or just plain Maple syrup. Now I fix for my kids buttermilk, strawberry, and blueberry pancakes and we all have to have either warm Maple syrup or warm Maple Pecan syrup. We have even tried Pumpkin pancakes because we love pumpkin pies, have to say Pumpkin pancakes with some whip topping and a sprinkle of cinnamon on top then add warm Maple Syrup and your in Heaven!! We have those on our pancake nights!!

  4. I love the blueberry muffin mix. My family loves muffins and then I can make a few tweaks and make some yummy breads with it as well that never last the weekend because the taste is so good.

  6. I have never tried Krusteaz, but I really like breakfast for dinner, for example, yesterday we ate pancakes for dinner, and it was great!
