With these pumpkin oatmeal cookie bars, you get divine pumpkin flavor, tart cranberries, soft and chewy oatmeal and dark chocolate all clustered together into a delicious baked bar that is way beyond delightful.  So easy to make and easy to customize!

Instructions How to Make Pumpkin Oatmeal Cookie Bars

  1. Preheat oven to 350 degrees. Spray an 8×8″ baking dish with non-stick cooking spray.
  2. In a bowl, stir or whisk flour, sugar, pumpkin pie spice, salt, baking soda and baking powder until combined and set aside.
  3. In another bowl, using mixer or whisk, mix pumpkin, eggs and vanilla until combined.
  4. Add in flour mixture and mix until combined.
  5. Using a wooden spoon, stir in oats, ½ of the chocolate chips and ½ of the cranberries until mixed in.
  6. Spread batter evenly into the prepared baking dish. Sprinkle with remaining chocolate chips & cranberries.
  7. Bake for approximately 25-30 minutes or until golden brown.

More Variations

  • We used chocolate chips and cranberries, but you could use raisins, peanut butter chips, cinnamon chips or even some white chocolate chips!
  • To make these gluten-free, easily switch out the rolled oats for gluten-free oats.
