Awesome Peanut Butter Cup Cookies

Who doesn’t love a good cookie cup?  Especially when they involve peanut butter and chocolate!  Count me in!

They are the perfect ‘pop-in-your-mouth’ holiday cookie cups and so full of deliciousness!  Of course, no one ever stops at one, do they?  From past experience, I can attest!

Soft, chewy, and packed with peanut butter flavor, these cookie cups truly are awesome. If you’re looking for a delicious treat that everyone will love, look no further than this simple but decadent recipe.

These mini peanut butter cookie cups are easy and the perfect tasty treats when it comes to a snack, an after-dinner dessert or party treats. I made these with Reese’s White Chocolate Peanut Butter Cups and Butterfinger Peanut Butter Cups.  OMG!

Seriously yummy with these options, of course you can always go with classic mini Reese’s Peanut Butter Cups!

I used my Thick & Soft ‘Ultimate’ Peanut Butter Cookie recipe for these lovely ‘Awesome’ Peanut Butter Cup Cookies. So delectable!! Bring these to the party!!  These peanut butter cookies with Reese’s cups ARE the party!

Now, all you need is a mini muffin pan, the recipe, ingredients and start baking! Even better, you can whip these up in just 15 minutes!

Ingredients You Need

Peanut Butter Cup Cookie Recipe

  • all-purpose flour
  • unsalted butter, if using salted butter, omit salt, softened
  • brown sugar
  • granulated sugar
  • 1 egg
  • vanilla extract
  • baking soda
  • salt
  • peanut butter
  • 24 miniature peanut butter cups

How to Make Awesome Mini Peanut Butter Cookie Cups  

  1. Preheat the oven to 375 F degrees and spray mini muffin pan with non-stick cooking spray, set aside while you prepare the cookies.
  2. In a small mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Using a mixer, combine the butter, peanut butter, sugars and vanilla.
  4. Beat on med-high speed for about 2 minutes, scraping down the sides of the bowl as needed.
  5. Add the egg and beat for about 30 seconds, until just incorporated.
  6. Add the flour mixture and beat on low speed until combined.
  7. Using a tablespoon cookie scoop, scoop or form the dough into balls and place them into the mini muffin pan. Do not have the dough go over the top of the muffin cup or you will get peanut butter cup overload and they aren’t as pretty.
  8. Bake for 8 minutes.
  9. The tops should look underdone, they will firm up as the cookies are cooling.
  10. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Can I Use Other Peanut Butters?

Use any type of nut butter like almond butter, sunbutter, or cashew butter.
