There are three elements to making this recipe. The blondies, the cinnamon layer, and the vanilla glaze. All three elements are easy to make and no mixer is required!

- Whisk together melted butter, brown sugar and sugar together in a large bowl until combined.
- Whisk in eggs and vanilla.
- Add flour, cornstarch, baking powder, and salt and whisk together until mixture is completely combined.
- Set aside as you prepare the cinnamon-sugar layer.
How to Make the Cinnamon Swirl
- In a small bowl combine melted butter, brown sugar, and cinnamon. Mix well.
Assemble the Blondie Batter, Cinnamon Swirl and Bake
- Spread the blondie batter into prepared baking pan.
- Using a spoon, drizzle cinnamon layer over the blondie batter randomly, then using the tip of knife, swirl the cinnamon mixture into the batter.
- Bake for 35-38 minutes, or until the edges just begin to turn golden brown and the center is no longer jiggly.

- Using a spoon, mix together the confectioner’s sugar or powdered sugar, vanilla and cream together to get a thick glaze. Microwave for 5-10 seconds if glaze is extra thick, to help thin the glaze, drizzling over the blondies.
- Using a spoon, drizzle glaze over cooled blondies. Let glaze set. Could also opt for a cream cheese glaze by just adding some softened cream cheese to this vanilla glaze!

- For the blondies, make sure the butter is melted and cooled enough to not cook the eggs when you add them to the butter/sugar mixture.
- The eggs are best at room temperature. However, as long as the melted butter is cooled enough, it is fine to use cold eggs straight from fridge, if you don’t have time for the eggs to come to room temperature.
- Check blondies at 35 minutes. If blondies aren’t jiggly when you gently shake the pan, they are done. They should be a golden color as well. Do not over bake the blondies, to get a soft and chewy texture, otherwise the blondies will be dry and hard. I found 35 to be the perfect magic baking time.
Storing Cinnamon Roll Blondies
- Store blondies in a sealed container or ziplock bag at room temperature for 3-4 days.
- Also, store these in the fridge, where they will keep for about 5-6 days. Nuke them in the microwave for a warm, cinnamon blondie treat!
Can I Freeze Cinnamon Roll Blondies?
- You can freeze the cinnamon roll bars, but it’s better if you don’t add the glaze until after you’ve thawed them. It’s super easy to whip up the glaze after the fact.
