  • cornstarch – used as a thickening agent for the filling. It easily dissolves, doesn’t have an overly starchy flavor or texture and creates the perfect consistency, allowing the pie to hold its shape when slicing.

  • strawberry gelatin – also used as a thickening agent giving the pie filling a red vibrant gel color.

  • 1 9 inch Pie crust, baked original recipe uses a baked pastry pie crust-homemade or store-bought frozen or refrigerated, but you could use a no-bake Oreo crust or a graham cracker crust as another option.
  • ¾ cup sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 package 3 ounces strawberry gelatin
  • 4 cups fresh strawberries quartered or sliced
  • Whipped cream or ice cream optional
