You should smell the cinnamon, apples and vanilla cake when it’s baking. O.M.G! Words cannot even come close to describe these amazing apple fritter muffins, but they are so heavenly.

Gather Ingredients for Apple Fritter Muffins Recipe
Apple Fritter Muffin Recipe
- brown sugar
- ground cinnamon
- granulated sugar
- butter
- large eggs
- vanilla extract
- all-purpose flour
- baking powder
- salt, optional (pinch)
- milk
- 2 apples any kind, peeled and chopped , mixed with 2 tablespoons granulated sugar and 1 teaspoon cinnamon
Old-Fashioned Creme Glaze
- powdered sugar
- milk or cream- depending on thickness of glaze wanted
How to Make Apple Fritter Muffins
- Preheat oven to 350 degrees. Use a muffin tin pan and spray with non-stick spray or use cupcake liners.
Make the Sugar Cinnamon Mixture
- Mix brown sugar and cinnamon together in a small bowl. Set aside.
Mix Up the Muffin Batter
- In another medium bowl, beat sugar and butter together using an electric mixer or stand mixer until smooth and creamy.
- Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
- Combine & whisk flour and baking powder together in another bowl and add the flour mixture into the creamed butter mixture and stir until just blended.
- Mix milk into batter until smooth.
Layering the Apple Fritter Muffins
- In each muffin cup, fill each tin ½ full of the cake batter; add 1 tablespoon of the apple/sugar mixture on top. Add your brown sugar/cinnamon mixture that you prepared in the beginning and top each muffin again by sprinkling the brown/sugar/cinnamon mixture between the 12 muffins. Lightly pat apple mixture into batter.
- Pour the remaining batter over each of the apple layers and spread out with a butter knife, then top each muffin with remaining apples. Lightly pat apples into batter again.
- Option: Swirl brown sugar mixture through apples using knife or spoon. (I did this with the Apple Fritter Bread on the blog, but not these muffins.)
Bake the Muffins
- Bake in the preheated oven until a toothpick inserted in the center of the muffin comes out clean, approximately 20-25 minutes.
Make the Vanilla Glaze
- To make glaze, mix powdered sugar and milk or cream together until well mixed.
- Let cool for about 15 minutes before drizzling with sweet glaze.

Ingredients

Jane did these hold up well in your freezer? I am considering making them for Christmas morning? Dud you precook them and let them thaw or did you prepare in muffin pans and freezer.; then cooking when thawed? I appreciate any feedback as I have never frozen muffins

I had bought 1/2 of Golden delicious apples from a fundraiser so I tripled this recipe and made muffins both large and small and a square loaf cake. I shared the baked items with my friends and family. Everyone loved tot. It is so amazingly delicious and super easy to make it. Peeling the apples and baking took the longest but you will love it. I have everyone wanting the recipe. I actually had extra diced apples mixture and brown sugar so I froze them to use in a cakes. I cooked my items a little longer but I think that varies on your oven. Thanks for sharing this recipe

I had some apples that needed using up and my stash of muffins in the freezer ran out so it seemed like the perfect time to try these muffins. They were so easy to put together, peeling and slicing the apples took the longest actually lol. Though my apples must have been larger than the ones you used, I had doubled the recipe so i chopped up 4 apples and even though I really added a lot to each muffin I still had nearly half left over. If I had had a 3rd muffin pan I would have just made another batch. The brown sugar and cinnamon mixture sort of melted on the apples creating a bit of a caramel flavor. These are soo good, might have to buy more apples when these start to run low lol

Probably about the best muffins I have made in a long time. Did some tweaking. I used half butter half coconut oil. Added white chocolate chips to the batter. When layering I put some apples, walnuts and cinnamon mixture in muffin cups first. Then added 2/3 batter. Another layer of apples, walnuts and cinnamon topped with remaining batter. Then used an oatmeal crumble topping. When done baking and cooled I drizzled with a Carmel glaze. Yum!!!!
Hi RaeAnna! No they don’t have to, but if you are sending them, I would send them right away. I don’t know how long they will hold up and they are best eaten within the first few days. Hope that helps!
Do these have to be refrigerated? My daughter and I made these and they came out amazing! I want to make more and send them to my mom.
I haven’t tried it but it says here to Use 1 1/2 Tablespoon sourcream (or one heaped Tablespoon) in the place of one egg. Beat in air when you add the sour cream just like you would with the egg. Let us know how it works out if you do!

Hmm..I wonder if it’s the butter you are using? I’ve never had them come out oily, but yes, try cutting the butter a bit and see how it works out for you! Or sub some of the butter for applesauce or yogurt maybe? Hopefully that works for you dear! Gotta keep the hubby happy! 😉
These are outstanding!! My only issue is that they are very oily. Should I cut the butter?? I have made these about four times with the same issue each time. Hubby really likes these.
