Ingredients You Need
Easy Baked Blueberry Donut Recipe
- all-purpose flour
- sugar of choice, granulated, brown or healthy sugar, like monk fruit
- baking powder
- salt
- milk of choice, buttermilk, Greek yogurt or sour cream can also be used, I used almond milk (Pro tip: If using Greek yogurt or sour cream instead of milk, substitute the milk in an equal amount. Or, if you prefer a more liquid batter, thin out with a bit of water.)
- eggs
- vanilla extract
- melted butter or oil of choice
- blueberries, fresh or frozen
Powdered Sugar Glaze Recipe
- powdered sugar, or monk fruit powdered sugar
- milk of choice
- vanilla extract
How to Make Delectable Glazed Blueberry Donuts
- Preheat oven to 325 degrees F. Grease two 6-cup donut pans or a 12-cup muffin pan or 1- 6 cup donut pan and 1- 12 mini donut pan, set aside. If making just mini donuts, you’ll get 24 minis.
Prep Donut Batter
- In a large bowl, whisk together the flour, sugar, baking powder and salt together.
- In another mixing bowl stir together milk, eggs, vanilla and butter/oil until well combined. Add milk mixture to the flour mixture and mix until combined, careful not to over mix the donut batter.
- Gently fold or mix in the blueberries to the dough.
- Place batter in large plastic bag with end cut off about ½”. Fill donut cavities about ¾” full. Bake for 18 to 20 minutes or until the dough springs back when poked for regular doughnuts, or 10-12 minutes for mini doughnuts.
- Let donuts cool in pan for 10 minutes before gently inverting pan and taking donuts out.
- While donuts are cooling, whisk glaze ingredients together. When donuts are cooled completely, dip tops of donut into.
Make Glaze
- Whisk together the powdered sugar and milk together in a shallow bowl until smooth. Dip the donuts into the icing, one at a time. Serve and enjoy!
Helpful Tip: If not eating right away after baking, store unglazed donuts in an airtight container to ensure they don’t get soggy. Then easily glaze them a few minutes before eating.
Donut Tips
- Be sure to measure the flour correctly, or once baked, you might end up with dense donuts. Just fluff your flour with a spoon, sprinkle it into your measuring cup, and use a knife to level it off.
- If you’re wanting a tangy batter, use buttermilk. You can also use Greek yogurt or sour cream instead of milk, just by substituting the milk in an equal amount. Or, if you prefer a more liquid batter, thin out with a bit of water or milk.
- Be careful not to overmix the batter, as overmixing can cause the donuts to become tough and if you’re using frozen blueberries, overmixing can cause the blueberries to discolor the batter.
- Optional: You can bring the milk and eggs out to room temperature before combining. This prevents you from over-mixing the batter and helpt the donuts to bake evenly.
- Do not fill your donut pan with too much donut batter, because the donuts will need a little room to rise. I like to put the batter in a pastry bag and pipe it into the donut cavities, it’s way easier than spooning it into the cavity. You could use a large ziplock bag and snip a hole in one of the corners to pipe, if you don’t have a pastry bag.
- Make sure the donuts are as cool as possible before dipping them in the powdered sugar glaze, otherwise the glaze will not set up nicely and melt off the donuts.
- After donuts are done baking, you could also place them in an airfryer for a minute or two to brown them up before glazing them so they taste more like they’re fried.
More Topping Options
- You could mix up either a powdered sugar glaze, like I did, or you could coat them with powdered sugar for a different option or eat them plain! Add some lemon juice or zest to the glaze for more summertime blueberry lemon flavor!
- You can also grab a tub of vanilla frosting and melt it in the microwave for 20-25 seconds and use that as a glaze option for dipping your donuts. Or just frost them with vanilla or a lemon frosting if you want with some sprinkles on top!
Storing Blueberry Cake Donuts
- Donuts will store for 2-3 days but best eaten the day of. If not eating right away, store unglazed donuts in an airtight container to ensure they don’t get soggy. Then easily glaze them a few minutes before eating.
How To Keep Glazed Donuts From Getting Soggy
- Store donuts in an airtight container should be enough to keep the donuts moist with a light and airy texture. Take care to place the donuts in a cool place away from the sunlight.
If you have a sweet tooth, you can’t go wrong with this easy baked blueberry cake donuts recipe. Just be warned that, once made, these will go quickly! If you love them as much as we think you will, share the recipe with your friends and family on Facebook, Pinterest, Instagram and Twitter.
