Instructions How to Make these Chocolate Covered Marshmallow Peanut Clusters

  1. For the chocolate peanut marshmallow clusters recipe – Melt together 2 cups semi-sweet chocolate chips + 1 cup milk chocolate chips and ¼ cup peanut butter in the microwave for 1 minute, stir. Repeat 1 minute, stir until melted. It’s ok to have some small lumps of chocolate chips in your chocolate, they’ll still keep melting/tempering as you keep stirring the chocolate to get it smooth and creamy.
  2. Add the peanuts to the melted chocolate and stir. Add in the marshmallows, stir.
  3. Prepare wax or parchment-lined baking sheet(s).
  4. Using a medium scoop (1.5 tablespoons) place scoops of chocolate mixture to make 30 clusters. Use a small scoop (1 tablespoon) onto the parchment paper or waxed paper for smaller scoops. Let set to firm up or place in refrigerator and cool for 30 minutes or until firm. Store in an airtight container.
  5. Let them set up and devour! You can make these smaller or larger depending on your preference. These chocolate-covered marshmallows make a large batch, so they are perfectly festive for your Christmas party trays or gifting in nice tins or decorated box.

How to Melt Chocolate on the Stovetop

Stove-Top Method – Not a microwave fan when it comes to melting chocolate? This method takes longer, but do what you feel comfortable with.

  1. Turn on your stove. Set it to low or medium heat. Use a saucepan and fill it with water at about an inch high. As it gets warm, the steam will heat the bowl on top of the pan and will help the chocolate melt. Keep stirring the chocolate with a rubber spatula as it melts in the pot.  Continue with the recipe with the peanuts and marshmallow mixture to make the clusters.

More Variations

  • We used salted roasted peanuts, but you can leave them out entirely or replace them with pistachios, pecans, walnuts, almonds or cashews!
  • Add rice krispie cereal or quinoa cereal to your treats if you like the texture of those, versus nuts.
  • Switch out the mini marshmallows with pastel marshmallows for holidays like birthdays, Easter or St. Patrick’s Day for a fun and festive idea! I’m sure the kids would love!
  • Use any chocolate you like for the coating, like white chocolate chips, milk chocolate, peanut butter chips or butterscotch chips.  These are a softer chocolate, so they will definitely need to be refrigerated until ready to serve.

  10. Hi Noreen, yes, you can leave it out. If the chocolate is too thick after it’s melted add a tablespoon or 2 of coconut, vegetable or canola oil to it help smooth it out. Enjoy!!! I can’t stop eating it! 🙂
