How to Make Fruit Hand Pies
Shortcut Fruit Hand Pie Recipe
- Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.
- Sprinkle a bit of flour onto your working surface. Roll out the pie crust so it’s 12 inches long and 20 inches wide. Then cut it into 8 circles that are 5 inches in diameter. (Can also do smaller rectangular sizes that are each 5 inches wide and 6 inches long.)
- Put 2 spoonfuls of your favorite pie filling in the middle of each sheet of dough. Put some egg wash around the edges of the dough and fold the dough in half. Push down around the edges of the packet with a fork to crimp and close.
- Put the pies on the baking sheet. Cut 2-3 small slits in the tops. Brush the tops with egg and sprinkle with sugar, if desired.
- Bake for 20 minutes. When it’s a golden brown color and the filling is bubbling, it’s done.
- Allow to cool for about 10 minutes, transferring to a wire rack after 5 minutes on baking sheet before glazing.
How To Glaze the Pies
While the turnovers cool, whisk together the icing and drizzle over the turnovers. Serve warm or cold and enjoy the fruity pie yumminess!
Pie Dough Tips
- If your dough is too soft to handle, put it in the fridge or freezer before baking. On hot days, you can put the hand pies in the fridge or freezer for 15-20 minutes before baking to make sure they stay cold.
How to Get A Crispy Hand Pie And Not A Soggy Hand Pie
- Brushing the dough with egg wash, keeping the dough cold, cooling the filling before spreading it on the crust, and baking at a high temperature are all important tips to get a crispy hand pie. But the filling is still liquid, and will soften the crust after 24-48 hours, even if you do everything right.
Storing Fruit Hand Pies
- You can keep the fruit pies at room temperature (it’s a good idea to cover them) for up to 2 days. They will stay fresh for 3–4 days once you put them in the fridge, but it’s best to eat them as soon as you can so they taste their best!
Can Hand Pies Be Frozen?
- Yes!! Put the pies on a baking sheet with parchment paper. Cut 2-3 slits in the top of each one, but don’t brush it with egg wash. Then freeze them.
- Put the baking sheet with the pies in the freezer. Freeze them until they’re solid. Put the frozen pies in a bag that you can zip up. You can store them this way for up to 3 months.
- Before you bake the pies, put them on a baking sheet covered with foil or parchment paper. If you want, brush them with egg wash and sprinkle sugar on top if desired. Bake the pies at 400°F for 20 to 25 minutes.
Want to Air-Fry These Mini Hand Pies?
- Preheat the air fryer to 350°F for 5 minutes.
- Spray the basket with nonstick cooking spray.
- Put two hand held pies in the basket. Air fry them for around 10 minutes, until the crust is a golden brown and the filling is bubbling.
- Take them out with care and place on a wire rack to cool. Do the same with the remaining pies. If your air fryer basket is big enough, you can cook more than two at once as long as you make sure they don’t touch.
