- 1 box Red Velvet Cake Mix, Duncan Hines or Betty Crocker are good brands to use
- ½ cup unsalted or salted butter, melted
- 2 teaspoons vanilla extract
- 1 & 1/2 cups white chocolate chip, use less or more depending on your preference, I wanted white chocolate in every bite!
Instructions How to Make Red Velvet White Chocolate Brownies with Cake Mix
- Preheat oven to 350 degrees.
- Line an 8×8 baking pan with parchment paper for easy removal and spray with non-stick cooking spray.
- Whisk together the egg to blend in a small bowl, set aside.
- In a microwave-safe bowl, melt the butter and let cool.
- In a large mixing bowl, using a mixer or wooden spoon, mix together the cake mix, melted butter, egg & vanilla until just combined, without overmixing. This will be a very dense batter.
- Add in the white chocolate chips and fold them to combine so they are evenly distributed.
- Spoon and spread the red velvet cake batter into the prepared baking pan, so all edges and center have the same thickness to cook evenly.
- Bake brownies for 20-25 minutes. When you touch the top, the edges will feel firm but the middle will still be a little soft. This is so the center stays rich and gooey. If you want a firmer brownie, bake for an additional 5 minutes for a total of 30 minutes.
- Remove brownies from the oven when done and let cool for 30 minutes. Once cooled, lift the parchment paper from the pan and place the baked brownies on a cutting board and cut into 9 large or 12 small squares and enjoy!
