Ingredients You Need
Easy no bake S’mores Clusters Recipe
- 2 cups milk chocolate or dark chocolate chips or chopped chocolate bar, for vegan – use non-dairy chocolate
- optional: 1 teaspoon coconut oil, canola oil or vegetable oil, if needed to thin chocolate
- 2 cups miniature marshmallows, for vegan – use vegan mini marshmallows.
- 4-8 graham crackers, use as much you want or you can use less. I’m using a small graham cracker square as the base of these s’mores treats, but you can opt not to do a graham cracker base and adding some of the graham cracker bits into the cluster mixture. Or you can just do clusters without the graham cracker base on the bottom.
- Toppings – graham cracker crumbs, sea salt or sprinkles
Instructions How to Make Easy No Bake S’mores Clusters
I’m using a small graham cracker square as the base of these s’mores treats and also adding graham cracker bits in the clusters, but you can opt not to do a graham cracker base and just add some of the graham cracker bits into the cluster mixture. Either way, they’re amazing!
- Line a baking sheet with parchment paper.
- If you want graham cracker bases for your clusters, cut or break some of the graham crackers into squares. Each graham cracker come in 4 sections, so if you break the sections, then break each section in half, to you give you 8 squares per sheet. Makes 16-24 depending on how big you want your clusters.
- In a medium microwave-safe dish add chocolate and microwave in 30 second intervals. After each interval, stir the chocolate gently with a spatula or spoon. Repeat intervals until chocolate is completely melted. Add oil if needed to thin chocolate.
- Add some graham cracker bits and marshmallows to the chocolate mixture. Mix until everything is coated in chocolate.
- Using a small or medium cookie scoop or large spoonful, scoop the smores mixture on to the parchment paper on each of the graham cracker squares. Make sure to leave enough room in between so your s’mores clusters aren’t touching. Sprinkle with some graham cracker crumbs or sea salt on the tops if you want.
- Refrigerate for one hour or until firm. Delish!
Storing S’more Clusters
- Keep s’mores marshmallow clusters in a sealed container at room temperature for up to a week. Can also be stored in the fridge and brought to room temperature when you’re ready to serve.
More Variations for No Bake S’mores Clusters
- Switch out the graham crackers with salted peanuts, dried cherries, dried cranberries, raisins, pistachios, rice krispies, golden grahams cereal, and the list goes on!
- You could make caramel s’mores clusters but adding a rolo or caramel in the center of the clusters, or just by adding some caramel bits into the cluster mix!
- Besides milk chocolate or semi-sweet chocolate, normally associated with smores, you could really turn the tables and melt white chocolate, or peanut butter chips instead, or do a mixture of chocolates. If you want colored clusters, use any of the colored candy melts for any color you want to shine through.
- We used graham cracker pieces and bits in our clusters, but you could use cookies for a fun kind of treat as well!
- Top these with festive sprinkles, sea salt or a drizzle of peanut butter or chocolate on top.
- You can control the size of the clusters, whether you want large clusters or small clusters, will depend on how many servings you will get. For small standard serving size, you can get about 12-14 clusters, if you want larger, you may get 8-10 clusters.
