How to Make Frozen Strawberry Cheesecake

Oreo Cookie Crust

As for the crust, you only need two ingredients for this crust – Oreos and butter. 🙂  No sugar or additional butter is needed like you would a graham cracker crust, because you’ve already got it covered in the cookies!

  1. Add the Oreos to a food processor or blender and grind into fine crumbs without removing the filling from the Oreos.
  2. Add the Oreo crumbs to a bowl and combine with the melted butter.
  3. Pour the mixture into a greased pie pan or springform pan  and press into an even layer on the bottom and up the sides. (The bottom of a measuring cup works well for pressing the crumbs evenly into the bottom and sides.)
  4. For a no bake crust , refrigerate it for 30 minutes before adding your filling. If you are going to bake it, bake at 350 degrees for 8-10 minutes and make sure you let it cool before you add the filling.

Strawberry Cheesecake Filling

  1. Whip heavy whipping cream until light and fluffy, without over-whipping. Set aside.
  2. Beat cream cheese and sugar until smooth and creamy.
  3. In a blender of food processor puree strawberries, until smooth but still somewhat chunky.
  4. Add the pureed strawberries and vanilla to the cream cheese mixture. Mix until well combined.
  5. Add whipped cream to strawberry cream cheese mixture and mix on low speed or fold in until well combined.
  6. Pour strawberry cheesecake mixture into Oreo cookie crust and cover with plastic wrap.
  7. Freeze for a minimum of 4 hours or until frozen.
  8. Remove the cheesecake pie from the freezer at least 15-20 minutes before serving. Otherwise this pie will be too hard to cut and eat, much like an ice cream dessert.
  9. Slice with a knife that’s been run under hot water and dry off excess water.

Garnish with your faves!

  1. Serve with whipped cream, and strawberries if desired.  Make it happy with sprinkles for special occasions!

Notes

For a shortcut, buy a pre-made Oreo or Graham cracker crust.
Instead of whipping cream, you can substitute 2 cups of Cool Whip instead of whipping cream, and decrease the sugar to 1/4 to 1/3 cup when adding to the cream cheese. You'll still need more whipped cream for the topping if you wish to garnish!

  1. Hi Ellen! Yes you can freeze this, just remove the cheesecake pie from the freezer at least 15-20 minutes before serving. Otherwise this pie will be too hard to cut and eat, much like an ice cream dessert! Enjoy!!

  2. Can this be made, frozen, then placed in freezer to serve in say, two weeks. If so, do I take it out of freezer just before serving it, or earlier?

  3. This strawberry cheesecake is indeed beautiful, so rich and creamy! I love the Oreo crust, such a decadently delicious chilled treat!

  4. Agree! We need all the frozen concoctions we can with this heat for sure! Thank you so much Ben!! Hope you’re staying cool! 😉

  5. What a beautiful, so refreshing and luscious dessert; strawberry and cream is one of my favourite combinations. And it’s frozen which is a huge bonus in this hot summer.
