- 1 cup butter, melted
- 1 ½ cups brown sugar, packed
- 1 large egg
- 1 egg yolk
- 1 tablespoon vanilla extract
- 2 ½ cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup sweetened shredded coconut, add more to tops if desired for toasted coconut
- 1/2 cup chopped pecans, add more to tops if desired
- 3 ounces German chocolate, chopped – can also use semi-sweet chocolate + add 1 ounce chopped to top of cookie bars (4 total ounces)
Instructions How to Make German Chocolate Cookie Bars
- Preheat oven to 350 degrees. Line a 9×13 pan with parchment paper (if you want easy removal), spray pan lightly with non-stick cooking spray
- In a large mixing bowl, add the brown sugar and room temperature melted butter and whisk together well.
- Add egg and egg yolk and whisk, then add the vanilla extract and mix again.
- Add flour, cocoa powder, baking soda, and salt and whisk together until just combined.
- Fold in the coconut, pecans, and chocolate chunks using a rubber spatula. Add some shredded coconut, whole pecans and German chocolate chunks on top.
- Transfer mixture to your prepared pan and spread the cookie dough mixture out evenly. You can use your fingers or use the back of the rubber spatula, as the mixture will be thick.
- Bake for 20-25 minutes and let cookie bars cool before cutting into them.
