Why These Cookies Are So Thick, Soft and Chewy

Aside from using flour and butter, to get moist and chewy cookies, we are using three different types of sugar: brown sugar, granulated sugar, and powdered sugar, and we increased the fat content using extra butter as well as an extra egg yolk to help with the process!

The cream of tartar makes these cookies soft as well and the baking powder helps them stay thick!

About the Green Cherries

Using jewel-toned green candied cherries are so fun, sweet and chewy, and complement red candied cherries in a variety of recipes!

They are available whole or halved and the shamrocks are super easy to make when decorating!  We love making this cookie recipe with green cherries!

So, are you ready to make some fun holiday cookies for St. Patrick’s Day?  These won’t disappoint!

Instructions How to Make St Patrick’s Day Green Cherry Shamrock Cookies

  1. Preheat the oven to 350F and line a baking sheet with parchment paper then set aside.
  2. Cut some of the green cherries in half for the shamrock leaves, then cut some strips of the green cherries for the stems. Set aside.
  3. In a large mixing bowl, using an electric mixer, cream the butter, granulated sugar, powdered sugar, and brown sugar until light and creamy.
  4. Add in the egg, egg yolk, and vanilla extract and mix until combined.
  5. Add in the flour, salt, cream of tartar, and baking powder, and mix just until the flour mixture disappears. Mix in the sprinkles/finely chopped cherries and white chocolate until combined.
  6. Using a large cookie scoop (¼ cup) scoop out sugar cookie dough balls and place them on the prepared baking sheet. Leaving about 2 inches of spaces in between them, you can leave the scooped cookie dough balls as is or flatten to about 1 inch in thickness.  I like mine super thick, so I don’t flatten them.
  7. Place 3 or 4 of the green cherries in the center of the cookie and add the stem to create a shamrock. Place the cherries pieces close together so they don’t spread when you bake them and stay close together.
  8. Bake green cherry cookies in the preheated oven for 10 minutes.
  9. Let the cookies cool on the baking sheet for 10 minutes then transfer to a wire rack to cool completely.

Storing Green Cherry Shamrock Cookies

  • These thick shamrock sugar cookies can be stored in an airtight container at room temperature for 4-5 days.

Other Variations

  • I used white chocolate chips, but you can use mint chocolate chips, rainbow coated chocolate chips or semi-sweet chocolate chips if you aren’t a white chocolate fan.  You can also leave the chocolate chips out all together if you like.
  • For the sprinkles, you can use any color you like.  Using green, rainbow or any color of nonpareils to accent your green cherries will work!
  • Color the cookie dough a fun light green by using a green food coloring.
  • Add some green pistachios for some crunch and salty yumminess!
  • These would be wonderful with some sweetened shredded coconut or you could add some almond extract or a cake batter extract for some delish flavor ideas!
