We’re winning the day with these Guinness Brownies! These thick and fudgy chocolate brownies are infused with Guinness Stout Beer (win!) and then topped with delicious vanilla frosting with a hint of chocolate bliss!
This recipe is perfect for St. Patrick’s Day, all the game days, parties and anytime you want to party with a fun alcohol flavor twist to your brownies!!
These Guinness Stout brownies are so scrumptious! They are more cake-like than chewy, but very chocolatey and they pair perfectly with the boozy frosting we used! They taste amazing!

- Irish Cream Irish Whiskey
ALL 3 of these will do quite nicely to keep up with the Irish!
The Irish have a reputation to uphold when it comes to slinging stout beer or whiskey, but just in case you fear someone might get drunk of these? Not likely!
The alcohol in the brownies is baked away and so the flavor stays infused in the brownies. As far as the frosting, we’re not doing jiggers or shots of alcohol, just a few tablespoons in a batch of frosting.
Ingredients You Need for Guinness Chocolate Brownies
Guinness Brownie Recipe
- all-purpose flour
- cocoa powder
- salt
- butter
- dark bittersweet chocolate chips or bar
- white chocolate chips
- large eggs, room temperature
- granulated sugar
- Guinness Extra Stout beer room temperature, no foam
Layer of chocolate chips
- 1 cup semi-sweet chocolate chips
Guinness Beer, Irish Cream or Irish Whisky Frosting
- ½ cup unsalted butter room temperature
- 2 ½ – 3 cups powdered sugar
- optional: ½ – 1 tablespoon unsweetened cocoa powder
- 1 teaspoon vanilla extract
- Pinch salt
- 3 tablespoons of Guinness Stout or choose Irish Cream or Irish Whiskey
Instructions How to Make Fudgy Guinness Brownies
- Preheat the oven to 375 F. Line a 9×13-inch baking pan with parchment paper or tin foil. Set aside.
Guinness Brownie Recipe
- In a medium bowl, stir or whisk together flour, (optional: cocoa powder), and salt until evenly combined. Set aside.
- In a microwavable bowl, place butter, bittersweet chocolate, and white chocolate chips in microwave in 30 second increments until melted. Can also use a small saucepan and melt on stove over medium heat.
- Using mixer, beat eggs and sugar on high speed until light and fluffy, about 3 minutes.
- Add melted chocolate mixture to the eggs and sugar mixture, beating until combined.
- Beat the flour ingredient mixture into the melted chocolate mixture. Whisk in the Guinness Stout beer by hand, batter will be thin.
- Pour the batter into the prepared pan.
Layer of chocolate chips
- Sprinkle top of brownies with semisweet chocolate chips evenly.
- Bake 25 to 30 minutes on center rack in the oven, until a toothpick inserted in the center comes out clean.
- Let the brownies cool, uncovered, to room temperature.
Guinness Beer, Irish Cream or Irish Whisky Frosting
- Using mixer, mix together all the ingredients until light and fluffy. Spread an even layer of frosting on top of brownies and add sprinkles or drizzle some salted caramel on top for an extra special treat! Double Frosting for extra frosting on top of these Guinness chocolate brownies!
