The easy healthy chocolate peanut butter oatmeal bar recipe requires only 4 ingredients!  Don’t you just love it?  I know I do!  Easy, plus delish and healthy?  All in!

So, here’s the real low down! Our 4 main ingredients include chocolate chips, peanut butter, oats and your choice of a healthy sugar. That’s it!

I used agave syrup, but you could use maple syrup or honey if you wish.  And there’s the corn syrup option as well, but I tend to shy away from corn syrup when I have the other healthier options to choose from. Overall, you need a sticky sugar to bind everything together perfectly. So whatever you have on hand, you can make it work!

Chocolate Peanut Butter Topping

  • semi-sweet chocolate chips use dairy-free chocolate chips, if you want a vegan

How to Make Easy No Bake Peanut Butter Oatmeal Bars

Peanut Butter Oat Mixture

  1. In a medium, microwave-safe bowl add peanut butter and maple syrup and heat in microwave 20 seconds and whisk together. Heat another 20 seconds if peanut butter mixture has not heated through and melted.
  2. Add oats. Stir and fold until thoroughly combined. Scoop oat mixture into the prepared baking pan.
  3. Using a rubber spatula, smooth into an even, tightly-packed layer. Set aside.

Chocolate Peanut Butter Topping

  1. Microwave chocolate and peanut butter together until melted in 30 second increments until melted. Stir and pour chocolate over bars, spreading out evenly over bars with rubber spatula or back of spoon.
  2. Freeze for 45 minutes, or until firm. Remove from freezer and slice into bars.

Peanut Butter Oat Mixture

  • 1 cup + 2 tablespoons natural creamy peanut butter
  • cup agave syrup or pure maple syrup honey can be used, but it won't be vegan
  • 1 & 1/3 cups old-fashioned rolled oats can use gluten free (can also use quick oats)
