We basically transformed super-easy, homemade cosmic brownies into brownie bites and decorated them with bewitching orange, green and purple frosting and mini rainbow chocolate chips with homemade and shortcut options too!

These easy one-bowl, homemade Halloween brownie bites are perfectly fudgy and quick to make when you’re in the mood for chocolate! This is a no-brainer for me–I’m always in the mood for chocolate and brownies!  Aren’t you?

The nostalgic vanilla buttercream on top with the rainbow chocolate chips makes these Halloween brownies irresistibly magical! The frosting is a simple vanilla buttercream that’s fast and easy to make. It has plenty of vanilla flavor, is creamy, and tastes amazing!

The rainbow chocolate chips make these treats whimsical and fun! You can use any kind of Halloween sprinkles, decorations or mini m&m’s.

These Halloween cosmic brownie bites will be a hit with the kids as well as the adults and we have recipe ingredient shortcuts to share with you if you want to simplify.  But, if you make them homemade, I’m going to say they taste better, for sure!

It doesn’t take that much effort to make these fudgy brownies. All you need is one bowl, no mixer, and you’ll have these mini brownies in the oven in no time. They are just as fast as using a boxed brownie mix, but that’s your call!

The homemade frosting does require a mixer, and it’s so easy to make.  But if you’re one of those who just aren’t feeling it, just buy a tub of fluffy vanilla frosting and make the colored frostings easier without whipping up frosting with a mixer.

For Homemade Cosmic Frosting & Toppings

  • unsalted butter, softened
  • confectioners’ sugar
  • vanilla extract
  • milk of choice
  • Food coloring gel for frosting, I used yellow/green, purple and orange
  • Rainbow chocolate chips or sprinkles of choice

How to Make Hocus Pocus Brownie Bites

Halloween Brownies Bites

  1. Preheat oven to 350 degrees F and spray a mini cupcake tin or silicone mini cupcake pan with non-stick cooking spray.
  2. Melt the butter in the microwave until melted. Once melted, add the sugar, cocoa power and salt and mix until smooth. 
  3. Add the vanilla and eggs and combine. Add the flour and chocolate chips until no more flour is visible.
  4. Using a spoon or tablespoon cookie scoop, scoop the brownie mixture into the mini cupcake tins and bake for 13-15 minutes. There should be a total of 24.
  5. If necessary, run a knife along the edge of the brownies to lift it out of the pan and let cool on a cooling rack before frosting.

For Shortcut Brownies 

  1. Preheat oven to 350 degrees  
  2. It’s simple.  Just make your favorite brownie mix and mix according to ingredients needed. Continue with steps 4 & 5. 

How to Make Frosting and Decorating 

Homemade Vanilla Frosting

  1. Using mixer, beat the butter to cream it, about 2 minutes or until smooth and fluffy.
  2. Add the confectioners’ sugar, vanilla, and milk and beat until very fluffy. Depending on the stiffness and consistency of the frosting, and how you prefer it, add more milk to thin it. If you add too much, you can add some more confectioners’ sugar.
  3. Divide the frosting into 3 different bowls and add orange, purple and yellow/green color to make the colored frostings.  
  4. Add the frosting to the brownies in a smooth, even layer or pipe frosting on top of brownies by adding frosting to ziplock bags and snip corners to pipe on top of brownies.  I do this step and then I use the back of a spoon and even it out a little.
  5. Add rainbow chocolate chips. Let frosting set a few minutes before serving.

Food Coloring Tips

  • These Americolor Soft Gel Paste Kits are water-based gels and they are the best in my opinion. They’re super concentrated, so you don’t need to use a whole lot to get rich colors when you add them to your frosting.
  • These gel pastes do not affect the taste or consistency of your buttercream, and they come in pretty much every color you could imagine.
  • You can also get a basic gel paste set and mix colors, which is what I did when it came to the green color.  I used yellow and green to get a bright neon green color that is associated with Halloween!
  • Start Out Small – Once you have the amount of buttercream measured out, the best way to approach coloring buttercream is start with a small amount of gel to see what color you end up with and go from there. The more buttercream you have, the more drops you’ll need to use to intensify or darken the color. Because of this, always start with a tiny bit of gel unless you want a super dark color to begin with.
  • Allow Time for Colors to Deepen – Not only does the color get richer and richer the more color gel you add, it’s also important to know that these colors will actually darken a little more over time.
  • If you need to lighten a color – add more vanilla frosting.

  • Another fun idea you could go for is substituting the buttercream icing for the cookie icing and coloring it with the food coloring gels.  You can buy it or make it homemade.
