Irish Cream Chocolate Boozy Brownies, I’m seriously thinking, these are what you need in your life for several reasons.

First of all, we’ve got booze in those thar brownies !

Do we need other reasons?  Baileys Irish Cream is so deliciously good with coffee, over ice, with drinks and of course, we can’t leave it out of dessert!  It was meant to be. Damn it! We know this!  (Liquor makes me cuss as you can see?)  

This delicious, creamy beverage is a blend of whiskey, cream, and sugar, typically made with a base of Irish whiskey. Ready to pour and enjoy, Irish Cream gives a smooth and luxurious experience to any dessert.

What Are Irish Cream Chocolate Boozy Brownies?

These rich chocolate brownies are stuffed with milk and dark chocolate chunks, and then the top of the brownies are sprinkled with bountiful slivers of more milk and dark chocolate with the addition of Irish cream!

Besides the Baileys Irish cream being in the brownies and frosting, the frosting is buttery, creamy, chocolatey and it has cream cheese in it too, so you know it’s going to be good!  They are more than good, they’re amazing!

If you think you’ll get a buzz off this Irish Cream Brownies Recipe, you won’t.  So sorry for that, we’re really just going for the Baileys Irish Cream flavor in these brown-browns!  

There’s not enough Baileys in this recipe to get you drunk, even if you ate all the brownies in one sitting.  However, you would still taste that lovely Irish cream flavor come through, which is what this brownie recipe is all about, the Irish cream flavor! 

AND…If you want a little more (Baileys Irish Cream is an Irish whiskey and cream-based liqueur, made by Gilbeys of Ireland), you could always add more to the frosting, and I wouldn’t blame you one bit! 

As for the buzz factor, you’ll have to sip some on the side if you want a little buzz! ha!

Ingredients You Need For Irish Cream Brownies Recipe

Irish Cream Brownies Recipe

Baileys Irish Cream Buttercream Frosting

  • cream cheese, softened
  • unsalted butter, softened
  • powdered sugar
  • Baileys Irish cream liqueur
  • milk chocolate bar, cut into chunks
  • dark chocolate bar, cut into chunks
  • chocolate slivers or shaved chocolate on top of brownies

How to Make Irish Cream Chocolate Boozy Brownies

  1. Preheat the oven to 325 degrees F, and spray a 9 by 9-inch pan with non-stick spray. Line with parchment so sides go up the sides of the pan.
  2. In a microwavable bowl, melt the butter, sugar, cocoa, and salt in the microwave in one-minute increments, stirring until butter is melted and warm, not hot.
  3. Add the eggs, one at a time, stirring after each addition.
  4. Stir in the flour, mix, then stir in the vanilla and chocolate chunks until incorporated.
  5. Transfer the batter to the prepared pan, and bake for 45-60 minutes, or until a toothpick inserted in the center comes out clean, with few crumbs adhering.
  6. Brownies should cool in the pan.
  7. Make frosting while brownies are cooling,

How to Make Baileys Irish Cream Buttercream Frosting

  1. Using a mixer, mix the cream cheese and butter together and mix on medium speed until smooth. Add the powdered sugar a cup at a time and then increase speed to medium-high and beat for one or two minutes, or until creamy and fluffy.
  2. Stir in the Irish cream and mix.
  3. Frost brownies, add some chocolate slivers or shaved chocolate on top and place in fridge, then remove by sliding knife down the sides of brownies and pull up the parchment paper and place brownies on cutting board.

Optional: When the brownies are done, using a toothpick or fork, poke holes into the brownies and brush ¼ cup of Baileys Irish Cream to the top of the brownies right after they come out of the oven so it can soak into the brownies.

If you want nice brownie slices, you can chill your frosted brownies before slicing.  But if you can’t wait, don’t let me stop you!

  • ¼ cup 1/2 stick unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ cup Baileys Irish cream liqueur
  • Chocolate Slivers
  • ½ cup or 1 milk chocolate bar cut into chunks
  • ½ cup or 1 dark chocolate bar cut into chunks

  3. If a title has booze in it then, that’s gonna be my kinda dish, you will not have to convince me any further. That optional 1/4 cup Irish cream is a must – all that Irish cream liquor!! Dang, wish I had a bottle in my cabinet to right now:) Happy valentine’s day Kim!
