- Preheat the oven to 350℉. Spray two donut pans with non-stick cooking spray. Set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar, set aside.
- In another medium-sized bowl, whisk together the eggs, milk, Greek yogurt, vanilla extract, lemon zest, lemon juice and melted butter. Add the wet ingredients into the dry ingredients and mix together with a spoon or rubber spatula until just combined.
- Scoop the lemon donut batter into a a piping bag to pipe the batter into the donut pan for best results when filling your donut pans. Make sure to not overfill as these donuts will rise a little.
- Bake both pans at the same time in the oven for 9-11 minutes until a toothpick inserted comes out clean.
- To release the donuts from the pan, keep the donuts in your donut pan for 10 minutes before transferring to a cooling rack. Cool completely before icing.
Instructions How to Make The Lemon Glaze
Lemon Glaze
- In a small bowl, mix the powdered sugar, lemon zest, lemon juice, and milk together. Use a whisk to mix the mixture together until it’s smooth, creamy and a nice glazing consistency to dip the donuts in. Dip the donuts into the icing.
- Feel free to top with extra lemon zest or sprinkles. Let glaze firm up before serving.
Storing
- These baked lemon yogurt donuts are best eaten right after they are freshly baked in my opinion. Store in an airtight container or ziplock bag at room temperature for 1-2 days or refrigerate donuts for up to one week.
Freezing
- Unglazed donuts can be frozen in the freezer for up to 2 months in an airtight container or in a freezer bag. Thaw lemon yogurt donuts overnight in the refrigerator, then allow to come to room temperature. Top with the lemon glaze once they are room temperature.
How to Get Light and Fluffy Lemon Donuts!
- Don’t over-bake donuts, this causes donuts to dry out quicker, so you’ll love that fluffy factor.
- Overmixing the donut batter will make the donuts tough, we want the opposite! Moist & fluffy please!
- Make sure to measure your flour correctly! Adding too much flour will result in dry, crumbly donuts that taste bad all the way around.
- By having your butter, melted and cooled and your eggs, milk and Greek yogurt room temperature, this allows the donuts to bake more evenly to give you that fluffy texture you’re looking for!
- Make sure to use a good non-stick cooking spray, like olive oil or Baker’s Joy when you spray your donut pans. That way your donuts release from the pan easily. Let them rest for 10 minutes before removing them for glazing for best results.
In conclusion, baking homemade lemon yogurt donuts with a zesty lemon glaze is a simple and delicious way to add a touch of sunshine to any day. Follow this simple recipe to create a batch of lemony goodness that will satisfy your craving for something sweet and tangy and impress your friends and family.
