How to Make Layered Lemon Cheesecake Bars
Pudding Layer
We used Comstock pre-made lemon pudding pie filling from the can to get truly homemade taste and quality. Plus, it’s super easy, because it’s already made, so one less step if you go down this route. You can also use instant lemon pudding or use your favorite homemade lemon pudding or lemon curd.
It should be thick and creamy whatever pudding you use, so it’s easy to layer the fluffy cheesecake on top of our lemon cheesecake bars recipe.
Cheesecake Layer
The cheesecake layer consists of cream cheese, whipping cream, lemon pudding and lemon zest. Whipped up light and fresh, it’s amazing! For the whipping cream, you can substitute it with store-bought whipped cream, like Cool Whip. Make sure you use a whipped cream that is stabilized.
Graham Cracker Layer
The delicious graham cracker crust is made with melted butter, graham cracker crumbs and a little sugar and is nicely pressed into an 8×8 pan. No baking. For the graham cracker crust, you can also use a pre-made graham cracker pie crust.
