I love to bake all kinds of quick breads for the best baking season of all!!  But since maple syrup and apples are on my radar right now, I decided to make a delectable Maple Apple Pecan Bread with a Maple Glaze and it’s sooo yummy!

Of course I had to share because maple and apples just go so amazing together! Like this Chunky Apple Walnut Cake has Maple Cream Cheese Frosting–another apple and maple favorite!

This maple apple pecan bread recipe has is a full fall flavor infusion coming at ya! I can’t even tell you how good this is, but here I am telling you. haha…it’s true.  It’s really is GOOD!  Plus, it’s easy to make and perfect for breakfast for snacking in the late afternoon!

Maple Apple Bread Vegan Options!

I’m really getting the vegan fever lately, so I decided let’s do this!  Vegan it is!

You can make this with an egg, if you wish, but I omitted the egg from the original recipe and used applesauce and avocado oil.  My husband, recently decided to buy avocado oil so we could try it and so I’m like obsessed with it now.  I really love using olive oil too!   Other times I use canola, it’s a little lighter and I like it solely for that reason.

Ingredients You Need

Maple Apple Pecan Bread recipe

  • all-purpose flour or gluten-free flour
  • cinnamon 
  • baking soda
  • salt
  • baking powder
  • unsweetened applesauce or  egg
  • pure maple syrup
  • Granny Smith apple cored & diced
  • cooking oil, I use avocado oil
  • chopped pecans

Buttery Maple Glaze

  • unsalted butter or dairy-free butter option for vegan
  • pure maple syrup
  • confectioners’ sugar sifted
  • salt

Instructions How to Make Maple Apple Pecan Bread

 Preheat oven to 350 degrees. Grease a 9 x 5 inch loaf pan or line with parchment paper and spray with non-stick cooking spray and set aside.

Maple Apple Pecan Bread

  1. In a mixing bowl, whisk together the flour, cinnamon, baking soda, salt, and baking powder and set aside.
  2. In another mixing bowl, whisk the applesauce/egg, oil and syrup together well and then add in the dry ingredients into the wet mixture and mix together using rubber spatula or wooden spoon.
  3. Fold in the apple and pecans and then pour and spread batter into baking pan.
  4. Bake 45-55 minutes, or until a toothpick inserted near the center comes out clean.
  5. Allow the bread to cool in the pan and transfer to platter or wire rack to glaze, optional.

Buttery Maple Glaze

  1. Using microwave, melt the butter and maple syrup together for 1 ½ – 2 minutes. Once the butter has melted, remove from microwave and whisk in the sifted confectioners’ sugar and salt. Set glaze aside and allow to cool and thicken while cookies cool. If icing is too thick, heat up in microwave 15-30 second increments to get icing consistency needed.
  2. Drizzle on top of bread and serve.

Storing Bread

  • Room Temperature – Store apple bread in an airtight storage container or ziplock bag for up to four days.

Freezing Bread

  • Freeze – Place unglazed apple bread in an airtight storage container or ziplock bag in the freezer for up to two months.  Glaze once it’s been thawed.

Quick Bread Tips

  • Don’t overmix the batter – this causes the bread to be tough or dense.
  • If using sweetened applesauce, reduce the sugar in the recipe down some.
  • Make sure you don’t slice the apples into large chunks, so they cook through.
  • Make sure you bake the bread through, otherwise the bread will be gooey and raw. You will know the bread is done baking when you touch the top of the bread and doesn’t feel soft or jiggly in the center. Also, you can insert a toothpick in the bread, and it should come out clean, without any gooey batter attached.

More Variations

  • We used pecans for some crunchy texture, but you can also sub with walnuts, pistachios or any nuts you prefer!  You can also leave nuts out as well.
  • Add some shredded coconut for a delicious twist on the apple bread!  Give it a tropical vibe!
  • Love chocolate in your quick breads?  Add a handful or two of some chocolate chips or chocolate chunks!
  • Sprinkle the top with some powdered sugar or a yummy vanilla glaze if you’re not able to do the maple glaze.

  1. I added a bit of nutmeg n cloves and increased with additional egg and apple. Made 4 mini loaves at appx 30 min 350. Super moist!!!! This is an incredibly delicious recipe. LOVE LOVE LOVE the maple icing. I also added a bit of milk to thin and just drizzled over the top. Saving this recipe.

  2. I had to try the recipe right away. I’m making it now and I have it figured out but the glaze instructions say dip in cookie. I just want to be sure the glaze recipe is the same.
