It is what it is! Lovely, complete me, Chocolate Chip Gooey Bars, iced with more chocolate! OMG! Chocolate Chips in anything is an exceptionally good thing, am I right? These addictive dessert bars definitely have it going on, just like Stacy’s Mom! Luscious and irresistible!
For sure, Stacy’s Mom is definitely going to like these Chocolate Cream Cheese Frosted Brownies, OMG S’mores Bars and these Double Stuffed Peanut Butter Cup Cupcakes too!
These bars are super easy to whip in no time and everyone goes bonkers over them! Why wouldn’t they?
The recipe title says it all! And if you’re wondering about who Stacy’s Mom is? “Stacy’s Mom” is a song by American rock band Fountains of Wayne and was released to radio as the album’s first single on May 19, 2003. And she would not turn these down! 🙂
Ingredients You Need
Bottom Layer
- 1 butter or yellow cake mix
- egg
- butter
Cream Cheese Layer
- cream cheese softened
- 2 eggs
- pure vanilla extract
- powdered sugar
- butter
- Ghirardelli semi-sweet chocolate chips
Icing
- Ghirardelli semi-sweet chocolate chips
- Ghirardelli milk chocolate chips
How to Make the Best Chocolate Chip Gooey Bars
- Preheat oven to 350 degrees. Light grease or spary with nonstick spray, a 9×13″ baking pan.
- Using a mixer, in a large bowl, add cake mix, egg, and butter and mix well.
- Pat cake mix mixture into the bottom of prepared pan and set aside.
- Using mixer and bowl, beat cream cheese until smooth, then add in the eggs and vanilla.
- Add powdered sugar and beat very well, then reduce the speed of mixer and gradually add in melted butter and incorporate well.
- Stir in the chocolate chips.
- Pour cream cheese filling onto cake mixture and spread evenly.
- Bake for 40-50 minutes.
- You want to center to be a little gooey, so don’t overbake.
- Remove from oven and scatter the milk and semi-sweet chocolate chips on top of the bars and let sit several minutes to let them soften and get all melty. Then using a knife, spread the chocolate around covering the entire pan of bars.
- Allow to cool for at least another hour and then cut into bars.
- Store leftovers in fridge and sealed.

So, it’s not a good idea to use chocolate chips in recipes that call for melted chocolate, because when melted, the chocolate becomes thick, muddy and grainy and it is very difficult to use.

OMG Chocolate Chip Gooey Bars
Ingredients
Cream Cheese Layer

Hi Ann! Hmm..not a fan of cream cheese? You could use mascarpone cheese, which is very close to cream cheese (sorry), or if you want to cut the cream cheese taste, you still would use cream cheese, but you could add in a cup of pumpkin, peanut butter or Nutella and add an extra egg to the cream cheese mixture to mask the cream cheese taste. I’m just grabbing straws here, but that’s probably what I would do to change them up. 🙂 Good luck dear! Wish I could be more help!
I know this will be a CRaZY question for a lot of people but, is there a good substitute for the cream cheese? I know, I know! Most people will say “WHAT? Why would you ever not use cream cheese?” I just can’t stand it! So, any suggestions on substitutions would be very welcome as this sounds delicious (minus the cream cheese..lol).
