Ingredients
no bake Pina Colada Lush recipe
- 1 ½ cups graham cracker crumbs – 12 full sheet graham crackers, crushed into crumbs
- ¼ cup granulated sugar or brown sugar or use a combo of both
- 6 Tablespoons unsalted butter or salted butter melted or coconut oil, melted (add a dash of salt if using unsalted butter if desired)
- 8 oz cream cheese, room temperature
- 1/4 cup powdered sugar
- 20 oz crushed pineapple, drained, 1 cup used for cream cheese layer and remaining used in coconut pudding mix layer
- ½ cup whipped topping
- 3.4 oz instant coconut pudding mix
- 1 cup milk of choice
- 1/2 cup toasted coconut
- cherries for garnish
Instructions How to Make Our Pina Colada Lush
- Crush 1 ½ cups of graham cracker crumbs and mix with 6 tablespoons of melted unsalted butter and ¼ cup of sugar until combined and sandy. Press into the bottom of an 8 by 8 glass baking dish.
- In a large mixing bowl, mix together 8 ounces room temperature cream cheese, 4 oz whipped topping, the powdered sugar and 1 cup of the drained pineapple until fully combined. Evenly distribute over the graham cracker crust.
- Mix together the milk, the coconut instant pudding and then add in the remaining drained pineapple and mix together. (you can even use the same bowl as from the cream cheese mixture without cleaning it). Let it sit for a few minutes before evenly spreading over the cream cheese layer.
- Top with the remaining whipped topping and then top with the toasted coconut. Refrigerate this coconut pineapple lush for 4 hours or overnight before serving. Add maraschino cherries on top if desired.
Storing Lush Dessert
Lush leftovers must be stored in the fridge and will last covered with plastic wrap or in an airtight container for up to 3-4 days.
