  2. Stir in mashed banana, crushed pineapple and coconut.
  3. Combine dry ingredients into the creamed mixture and stir until combined.
  4. Transfer and bake at 350-f degrees into a greased 8-in. x 4-in. loaf pan for 65-70 minutes or 9-in. x 4-in. loaf pan for 60-65 minutes or until bread test done.
  5. Cool gluten free banana bread in pan for 10 minutes; remove to a wire rack.
  6. Slice and enjoy when cooled.

Tips for Storing

  • Banana bread kept at room temperature will stay fresh for about four days.  Make sure it’s completely sealed.
  • To store banana bread in the fridge, wrap it in plastic wrap, making sure the entire loaf is covered in an airtight container or ziplock bag. Store the banana bread in the fridge for five days.

  • ½ cup unsalted butter softened
  • 1 cup sugar
  • 2 eggs room temperature
  • ½ cup ripe banana mashed
  • 7 ounces of drained crushed pineapple
  • ½ cup flaked sweetened coconut
  • 2 cups Orley's Sydney Blend Gluten Free Flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
