When I dive into a yummy, home-baked, peanut butter cookie recipe, things get a little dangerous around here.  Especially when they taste as good as these gluten free healthy peanut butter cookies, it’s easy to go overboard and hard to believe they are made with with coconut flour! 

Do you have any idea how hard it is to just limit yourself to 2 or 3 cookies at a time?  It’s pure torture for me, but worth it as long as I don’t go too overboard and I still get to enjoy my guilty pleasures.  I’m good and then I give them away ASAP! And…What about you? Your guilty pleasures?

Ya…and don’t even get me started on the peanut butter cookie dough…Another guilty pleasure of dessert torture.  But hey…can’t stop me!

Using Coconut Flour For Gluten Free Peanut Butter Cookies!

These cookies are gluten-free and made with coconut flour. They are the bomb, and you and everyone else will love them, gluten-free or not.

We used Purely Amazing Flour, which I am loving and with the increasing number of allergies, there are more readers asking for more gluten-free recipes.

Purely Amazing was created to address grain allergies.  It is a non-grain flour, which is an alternative to wheat flours, besides being healthier. It is a gluten-free flour, made from Organic Coconut Flour, Organic Tapioca, Organic Amaranth, Organic Arrowroot, and Organic Gar Gum so it’s a beautiful blended coconut flour. 

Gluten-free flours are commonly used in baking, particularly keto/low-carb, paleo, grain- and gluten-free baking. I was super excited by the taste, so if you’re on a gluten-free diet by necessity or choice, you can will definitely enjoy these!   For a nut-free version, use sunflower seed butter

"Purely Amazing" Peanut Butter Cookies - Gluten-Free

Ingredients You Need

How to Make Purely Amazing Peanut Butter Cookies

  1. In a bowl, whisk together the flour, baking powder and salt and set aside.
  2. In another large bowl, using a mixer, cream the butter, peanut butter, sugars until light and fluffy, about 2 minutes. Beat in the eggs and vanilla.
  3. Stir in the flour mixture and mix together until just combined. Cover and chill dough 1 hour. Also can be baked right away, but you need to use a cookie scoo
  4. Preheat oven 375 degrees and line a couple sheet pans with parchment paper.
  5. Use a 1 or 2 ounce scoop and place on cookie sheets 2-3 inches apart.
  6. Bake 11-14 minutes or until the cookies are just set and the edges start to turn golden brown. Let them cool for a few minutes and then transfer to a wire rack to finish cooking. Removing them too soon will result in them breaking apart or crumbling, so don’t!

I like to add a couple extra tablespoons of coconut flour to the recipe sometimes. The dough is a soft consistency, so it's allowable.  After mixing the dough, I like to let it sit in a bowl on the counter for a few minutes to let it breathe a bit and then put the dough in the fridge for another few minutes and then scoop out the dough if I want them sooner than later.  I scoop 2 rows of 4 cookies (8) on a baking sheet, these cookies do spread out.  Feel free to add some chocolate chips, peanut butter chips or frosting with sprinkles! Hope you enjoy!

  1. Hi Linda, I am not sure, but I would just add a little more of your flour mixture, maybe like a half cup or so and leave out the xanthan altogether and see how it turns out and I may take out an egg. Maybe half the recipe to try it and see. Let us know how it turned out if you try it! 🙂

  2. Is there an alternative to the flour mix you use? I make my own mix of brn rice, potato starch and tapioca. I would normally sub but coconut flour requires extra moisture and not sure how to modify and xanthan is guess work as well, thanks, Linda

  4. What a great concept! I need to do that more often! I always go for the biggest cookies most of the time Valentina with no control! hehe I hope you try it! Purely Amazing flour has cookie mix, this recipe and they also bake cookies and send out if you don’t want to mess with it, but I love baking, so ya know. Thanks so much dear!!   5. Yes, it’s VERY difficult to limit myself to 2 or 3 cookies! That’s I why make tiny cookies, then I can have a million. 😉
    I’ll be trying this recipe.. My 15 yr old has Celiac Disease so he’s GF, and of course the more delicious GF desserts, the better. And we all love peanut butter. ~Valentina
