I’m ready for summer, always am!  It’s because I live in  Indiana and we get to experience all 4 seasons. which some people would kill for.  But, I would be happy with an average of  sunshine filled, 84 degree weather every day.  There are many reasons for this.  

S’mores Ice Cream Cake is one reason.  (That’s reason enough right there!! )  Not that I can’t eat ice cream delights in the dead of winter BUT…in the summer, I don’t have to put my coat on.  

My fingers, toes and nose don’t have to freeze every time I step outside!  I don’t have to scrape the frost off of my windows to see to see the ugly, gray perma-cloud as I drive to work every day.  Plus, I don’t have start my car ahead of time so I waste my gas.  

I just can’t get motivated when I’m cold!  I prefer to stay home, stay warm and bake and eat cookies, brownies and chocolate and make this s’more ice cream cake recipe!

And in the summer, I can wear flip-flops!  I actually want to go outside!  Pretty flowers, growing gardens, picnics, beaches and and devouring this S’more Ice Cream Cake every chance I can.

Don’t get me wrong, I might miss the snow-blowing blizzards on Christmas only. MIGHT! But that’s it!  Winter is over-rated by those who LOVE it!  Blah!

Anywhoo…enough about my winter doldrums!  This S’more Ice Cream Cake is a great dessert for the whole family on a Sunday afternoon.  It’s also perfect for a birthday celebration and if you love s’mores, well you will love it for sure!!

Just let it sit out 5 minutes before slicing and what you don’t eat, put back in the freezer.

Ingredients You Need for S’mores Ice Cream Cake Recipe

Graham Cracker Crust

  • graham crackers
  • butter

Chocolate Ice Cream Layer

  • bittersweet chocolate or chocolate chips, I used Ghirardelli 60% Bittersweet Chocolate chips
  • sweetened condensed milk (Reserve other ½ can for whipped topping layer)
  • vanilla – I used Singing Dog Vanilla Extract

How to Make S’mores Ice Cream Cake

Graham Cracker Crust

  1. Heat oven to 350°.
  2. Line bottom of 8″ springform pan with parchment paper. Using a food processor, pulse 10 graham crackers until finely ground, then add butter and pulse until blended or crush crackers in ziplock back using rolling pin and add graham crackers to bowl, add melted butter and use fingertips to mix it all up well.
  3. Press graham mixture into bottom of prepared pan.
  4. Bake until golden brown, 8 to 10 minutes. Let cool 25 minutes.

Prepare Chocolate Ice Cream Layer

  1. Melt chocolate in microwave, let cool slightly.
  2. Using electric mixer, beat chocolate, half the condensed milk (½ can), and ¾ teaspoon vanilla in large bowl until combined. Add 1 cup of the heavy cream and beat on high speed until thick, medium peaks form.
  3. Spoon mixture on top of cooled crust and spread evenly.

Marshmallow Layer

  1. Sprinkle marshmallows on top and gently pat down into the chocolate filling.

Whipped Cream Layer

  1. Using electric mixer, beat remaining condensed milk, vanilla, and heavy cream until thick, medium to stiff peaks form, 3 to 5 minutes. Spread on top of chocolate layer.

S’more Layer

  1. Break remaining 2 graham crackers into tiny pieces. Sprinkle graham pieces, broken chocolate bars and marshmallows on top of whipped cream layer.
  2. Cover and freeze until firm, at least 8 hours and up to 2 weeks. When ready to serve, unmold cake and transfer to platter.
  3. Let stand 5 minutes before slicing.

Ingredients
  

Graham Cracker Crust

  • 10 graham crackers divided
  • 3 Tablespoons butter softened

Chocolate Ice Cream Layer

  • 5 oz or 3/4 cup bittersweet chocolate or chocolate chips I used Ghirardelli 60% Bittersweet Chocolate chips
  • ½ can of 14oz can sweetened condensed milk (Reserve other 1/2 can for whipped topping layer.
  • ¾ teaspoons vanilla - I used Singing Dog Vanilla Extract

Marshmallow Layer

  • 2 cups mini marshmallows - I used Kraft

Whipped Cream Layer

  • 2 cups heavy whipping cream
  • ½ can of sweetened condensed milk reserved from above
  • ¾ teaspoon vanilla extract - I used Singing Dog Vanilla Extract

  • ½ cups mini marshmallows - I used Kraft
  • 2 Hershey's Bars broken up
  • 1 to 2 Graham Crackers to be crunched on top - I used Honeymaid

Instructions
 

  • Heat oven to 350°.

  3. Oh Kim!! We are kindred spirits haha! I so would be ok living somewhere with an average climate of …(I don’t know what 84 is but in Celsius I would be happy with 25 every day)!!
    That being said, I live in Canada where the temperatures drop to ungodly numbers and I would STILL eat this scrumptious ice cream cake. There is something extra special about a homemade one.
