Ingredients You Need S’more Cookie Cake Recipe
Cookie Cake
- butter
- brown sugar
- granulated sugar
- eggs
- vanilla
- all-purpose flour
- baking soda
- salt
- graham crackers, broken up into bits
- milk chocolate chips or can use Hershey bars and break them up into pieces
Chocolate Layer
- milk chocolate chips, add more chocolate chips on top if you prefer a thicker chocolate layer

How to Make S’mores Cookie Cake
Cookie Cake
- Preheat oven to 350°F. Spray an 8 or 9-inch springform pan with nonstick cooking spray and set aside. Can also line an 8 or 9 inch cake baking pan lined with parchment paper or tin foil sprayed with non-stick cooking spray.
- In a large mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
- Using a mixer, cream together the butter, brown sugar, and sugar until well combined for 1 -2 minutes. Add the egg, egg yolk, and vanilla extract and mix until fully combined.
- Slowly mix in the dry ingredients and continue mixing until just combined, then mix in the chocolate chips.
- Transfer the cookie dough into the prepared springform pan and spread it out into one even layer.
- Bake at 350°F for 25-30 minutes for a 9″ pan and 30-35 minutes for an 8″ pan or until the top of the cookie cake is set and lightly browned.
- Remove from the oven to add the chocolate layer.
Chocolate Layer
- Sprinkle chocolate chips on top and let them sit for 5 minutes, while they get melty and then spread it around. Let cake continue cooling.
Marshmallow Layer
- When you’re ready for some s’more fun, add the marshmallows on top and using a butane torch lightly toast the marshmallows.
- Slice and serve cake while it’s still warm or if you want completely nice looking cuts, wait until the cookie cake has cooled completely. Either way, AMAZING!!
- You can broil the marshmallow on top of the cookie cake as well if you don’t have a butane torch. Preheat oven on broil and place dessert under broiler for a couple of minutes, watching carefully until marshmallow toasting is to your satisfaction. It’s simple to prep everything and have it ready to go right before you serve it.
As Far As The Graham Crackers…
- I used graham crackers that I broke up because I didn’t want to use crumbs, I wanted actual graham cracker bits. But if you want to crumbs, that is fine. Just make sure you don’t add too many crumbs.
- Another option is, you could also sprinkle graham cracker crumbs on top of the chocolate layer on top of the cookie cake instead of adding it in the cookie dough, or both! 🙂

- Warm a slice up in the microwave for 20-30 seconds if you want the out of the oven yummy experience for the gooey and melty feels.
- Stores well at room temperature and the refrigerator. Store cookie cake in sealed container for up to 4-5 days.
