- 15.25 oz. size yellow cake mix with ingredients called out on box for 9×13 cake mix. (oil, eggs, water)
- fresh blackberries
- butter
- flour
- cinnamon
- brown sugar
- vanilla extract
- salt
How to Make Starbucks CopyCat Coffee Crumb Cake Recipe (with Blackberries)
Blackberry Coffee Cake
- Preheat oven to 350F and spray a 9×13 pan with non-stick spray.
- Prepare cake mix in large bowl according boxed instructions.
- Fold in the blackberries or any add-ins.
- Pour and scrape cake batter into pan and bake for 17-22 minutes and make the crumb topping while the cake is baking. You want to pull it from the oven when the center is just barely set and not completely fully baked to add the crumb topping. Depending on what cake mix you use, you can go by the cake mix instructions and see how long that takes for a 9×13 cake to bake. Just pull it from the oven the last 10-15 minutes for the streusel baking time.
Crumb Topping
- Using a mixer, cold butter, flour, cinnamon, brown sugar and vanilla until all crumbly. Break up crumb topping into marble size pieces with fingers before adding it to the cake.
- Remove the cake from oven and sprinkle the crumb topping on top of the cake.
- Put back in oven and bake an additional 10-15 minutes.
- Let cake cool fully then dust with powdered sugar if desired.
- Cut into squares and serve.

- Be sure the cake is baked enough before adding the streusel or the streusel topping will sink into the cake. Just pull it from the oven the last 10-15 minutes for the streusel baking time.
- It may seem like you have too much streusel made, but trust me, this is the perfect thickness and ratio for this coffee cake. But, if you want to halve it, that is perfectly fine!
- I used fresh blackberries, but you could use frozen if you wish.

- 1 ½ tablespoons cinnamon
- 1 ¾ cups brown sugar
- 1 ½ tablespoons vanilla extract
- powdered sugar for dusting
