Ingredients You Need
Super Easy S’mores Bars Recipe
- 1/2 cup unsalted butter, softened
- 1/2 cup light brown sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1 1/3 cup all purpose flour
- 3/4 cup graham cracker crumbs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Milk chocolate candy bars, 6-7 Hershey Bars or you could also use milk chocolate chips
- 3 or 4 cups mini marshmallows – depending how marshmallow you want
Instructions How to Make Super Easy S’mores Bars
- Preheat oven to 350 degrees. Line an 8-inch square baking pan with parchment paper and spray with nonstick cooking spray.
- In a large bowl, using a mixer, add the butter and both sugars and beat until light and fluffy, 2-3 minutes.
- Add in egg and vanilla and mix until combined.
- In another medium bowl, combine the flour, graham cracker crumbs, baking powder and salt.
- Add the dry ingredients to the wet ingredients and mix just until combined.
Layering & Assembling The Bars
- Press half the dough into the prepared pan and bake for 15 minutes.
- Remove from the oven but keep the oven on. Layer the chocolate bars on top of the pan and then sprinkle with marshmallows.
- Sprinkle the remaining cookie dough on top of the marshmallows, it’s ok if you have marshmallow exposed to let the marshmallow peek through, it looks cool!
- Bake for 15 minutes or until just lightly browned and the bars look set and baked to perfection! Allow the bars to cool down in the pan before cutting them. I took a butane lighter torch and slightly charred some of the marshmallow, but it’s not necessary, I just did it for that real s’more charred effect. Also, you can add chocolate bar sections on top of the bars if desired.
- Tip: When you cut the bars, they can still be slightly warm, or cooled completely, but don’t try cutting them right after they’re baked, so it’s not a crumbly, super sticky mess. I like to take a sharp knife and spray it with non-stick cooking spray to help the marshmallow from sticking to the knife, it works really well.
Storing Baked S’mores Bars
- Store smores bars at room temperature for 3 days in an airtight container.
Freezing Baked S’mores Bars
- Freeze smores bars in an airtight container for up to 3 months! Thaw in fridge overnight or on counter at room temperature for an hour or so.
S’more Tips, Substitutions & Serving
- When you cut the bars, they can still be slightly warm, or cooled completely, but don’t try cutting them right after they’re baked, so it’s not a crumbly, super sticky mess. I like to take a sharp knife and spray it with non-stick cooking spray to help the marshmallow from sticking to the knife, it works really well.
- Use fresh marshmallows instead of old marshmallows. This can also make cutting the bars hard, because the marshmallows become even stickier, but not fluffy and soft like you want in these bars.
- If you don’t have marshmallows, you could try marshmallow creme, but I haven’t tried it! If you do, let us know how it turned out!
- I used some Superman Hershey Bars, but you can use any chocolate bar or chocolate chips you want. You can substitute with bars or chocolate chips of dark chocolate, or semi-sweet chocolate. You could also put some Reese cups or Hershey’s Symphony Bars in place of the chocolate bars as well! YUM!
- To give them a charred flavor, you can take a butane torch and lightly scorch the tops of the marshmallows on your bars, but be careful not to char too much!
- These are awesome as is, but for a decadent, ultimate treat, serve these with a scoop of vanilla ice cream to take these to the next level!
