Instructions

Oat Crisp Crust & Topping
In a large bowl, toss together the oats, flour, brown sugar, baking powder, baking soda, and cinnamon.
Add melted butter to mixture and using a fork, mix mixture together until it’s crumbly.
Measure out 1 ¼ cups of the oat mixture to use for topping; set aside.
Pour the remaining oat mixture into a greased 9 inch baking pan and press firmly to the bottom of the pan.
Bake 15 minutes, or until a golden brown. Make cream cheese mixture while crust is baking.
Cream Cheese Layer
In a large bowl, add softened cream cheese, sugar, and vanilla and beat with mixer until smooth and creamy.
With the mixer on low, add the eggs, one at a time, until fully incorporated. Set aside.
Apple Pie Layer
In a large bowl, combine apples, flour, brown sugar, and cinnamon.
How to Assemble Apple Crisp Cream Cheese Bars
Scatter apples on top of the cooked crust.
Spread cream cheese mixture over the top of the apples.
Top cream cheese layer with oat mixture.
Bake 38-45 minutes.
Let cool completely, then refrigerate until ready to serve.
To cut, easily remove the cheesecake bars from the pan by lifting out the parchment paper.
Top with caramel topping when you are ready to serve if desired.
