CINNAMON CRUMB STREUSEL TOPPING
CHOPPED APPLE MIXTURE
- 2 large apples like Granny Smith peeled and chopped small, but not fine
- 3 tablespoons granulated sugar
- 1 ½ teaspoons cinnamon
OLD-FASHIONED CREME GLAZE
- ½ cup powdered sugar
- ¼ teaspoon cinnamon
- 1-3 tablespoons of cream depending on thickness of glaze wanted. You can also use any milk of choice.

CINNAMON CRUMB STREUSEL TOPPING
APPLE CAKE RECIPE
Heat oven to 350°F. Grease and flour (or use a good baking spray) a 8-inch round pan. (I like to use a springform pan because I find it much easier to get the cake out.)
In a medium bowl, combine all-purpose flour, baking powder, cinnamon, salt and baking soda. Set aside.
Using a mixer, in a large mixing bowl, beat the butter and granulated sugar in large bowl until light and fluffy. Add eggs, Greek yogurt/or milk of choice and vanilla and mix together well. Gradually add dry ingredients, adding in 1/3 increments, mixing well after each addition.
Mix in the cinnamon and sugar into the chopped apple mixture.
Place 1/2 of the cake batter into the prepared pan, leveling with the back of a spoon or an offset spatula. Add half of the chopped apple mixture on top, then add the remaining cake batter, followed with the remaining apples.
CINNAMON CRUMB STREUSEL TOPPING
Top the cake with the crumble topping.
Bake the cake for 60 to 75 minutes. If the crumble is browning too much towards the end, and the center is not yet cooked, cover it with a piece of aluminum foil to finish baking.
You will know the cake is done baking when you touch the top of the cake and it doesn’t feel soft or jiggly in the center underneath the crumb topping. You can also take a toothpick and insert it into the center of the cake, making sure to avoid any crumble pieces. If the toothpick comes out clean, without any batter sticking to it, your cake is done. However, if there are still wet or gooey crumbs attached, it needs a few more minutes in the oven.
Once the cake is done, remove from the oven and let the cake cool down completely before serving. Make the glaze.
OLD-FASHIONED CREME GLAZE
To make glaze, mix the powdered sugar, cinnamon and cream together until well mixed and smooth and creamy.
Once the cake is cooled, drizzle it with glaze.
