- 2 ½ cups old-fashioned rolled oats
- 1 cup slivered or whole roasted almonds
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
- ½ cup light agave nectar or pure maple syrup or a combination of both
- ¼ cup oil melted
- 1 Tablespoon pure vanilla extract

Preheat oven to 300°F. Line a large baking sheet with parchment paper or a silicone baking mat, that way the sweetener from the granola doesn't stick to your baking sheet.
In a large bowl, stir together the oats, almonds, cinnamon, and salt. Set aside.
In a medium bowl, whisk together the light agave nectar or maple syrup, melted coconut oil and vanilla together until combined. Pour mixture over the oats and toss to coat all the oats.
Spread out onto the prepared baking sheet and bake for 45-50 minutes. Don't over-bake as over-baking the granola seems to break the sugar bonds and the granola will crisp up as it cools down. Allow granola to cool completely before breaking it up, so it stays crunchy.
