Graham Cracker Crumbs

Peanut Butter Cheesecake

Chocolate Ganache

  • ¾ cups semisweet chocolate chips can also use all semi-sweet chocolate chips 1 & 1/2 cups total
  • ¾ cup milk chocolate chips can also use all milk chocolate chips 1 & 1/2 cups total
  • ½ cup heavy cream

Chocolate Peanut Butter Cheesecake Bars

    Graham Cracker Crumbs

    • Mix crushed graham crackers and melted butter together, then press into the bottom of a lined 8x8-inch pan.

    Peanut Butter Cheesecake

    • In a bowl, mix together the softened cream cheese, peanut butter, powdered sugar, and vanilla until smooth. Mixture will be thick. Set aside.

    Chocolate Ganache

    • In a microwave-safe bowl, melt chocolate chips with heavy cream, stirring every 30 seconds until smooth.

    Assemble the Peanut Butter Chocolate Layers

    • Use a small cookie scoop or spoon some of the chocolate ganache over the graham cracker crust, leaving most of it for the top.
    • Spoon the peanut butter cheesecake mixture over the top of the chocolate, don’t spread it, but just kind of flatten down the tops of the scoops so when you add the chocolate ganache on top the peanut butter scoops, the chocolate will cover the peanut butter cheesecake.
    • Add the remaining chocolate ganache over the top and smooth out the top!
    • Add peanut butter and chocolate chips on top if desired.
    • Refrigerate for at least 4 hours, or until set, before slicing into bars.

    Notes

    More Variations
    • Another option for layering is to layer the all the peanut butter, then follow with the chocolate ganache in just 2 steps on top of the graham cracker crust.
    • Can also add mini reese cups, m&m’s, Reese’s Pieces or sprinkles on top of the bars for more options if you want.
