Spray an 8-inch pan with non-stick cooking spray and line it with parchment paper, leaving some extra paper over the sides.
Melt butter over medium heat in a large saucepan. Once it's melted, reduce the heat to low.
Add 10 ounces of the marshmallows to the butter mixture. Spray a mixing spoon with cooking spray and continuously stir until marshmallows are fully melted.
Remove the pan from the heat and add in the cinnamon crunch cereal and the remaining 6 ounces of mini marshmallows and stir until marshmallow mixture has coated the cereal.
Pour the mixture into the prepared baking pan, gently pressing the mixture down into an even layer in the prepared pan.
If desired, melt the white chocolate in the microwave in 30 second increments, stirring in between each increment, repeating until completely melted and smooth. If you want thinner chocolate to drizzle, add in 1 teaspoon of the coconut oil and mix it in until it’s melted. Drizzle white chocolate on top of the bars by placing the mixture in a pastry bag, snipping a small hole and drizzle away! Can also drizzle with a spoon.
Cool completely and once set, pull the bars out of the pan in once piece using the parchment paper and slice. Store cooled bars in an airtight container.
