I'm using a small graham cracker square as the base of these s'mores treats and also adding graham cracker bits in the clusters, but you can opt not to do a graham cracker base and just add some of the graham cracker bits into the cluster mixture. Either way, they're amazing! You can see in the post the photo tutorial how I did it if you wish.
Line a baking sheet with parchment paper.
If you want graham cracker bases for your clusters, cut or break some of the graham crackers into squares. Each graham cracker come in 4 sections, so if you break the sections, then break each section in half, to you give you 8 squares per sheet. Makes 16-24 depending on how big you want your clusters.
In a medium microwave safe dish add chocolate and microwave in 30 second intervals. After each interval, stir the chocolate gently with a spatula or spoon. Repeat intervals until chocolate is completely melted. Add oil if needed to thin chocolate.
Add some graham cracker bits and marshmallows to the chocolate mixture. Mix until everything is coated in chocolate.
Using a small or medium cookie scoop or large spoonful, scoop the smores mixture on to the parchment paper on each of the graham cracker squares. Make sure to leave enough
Refrigerate for one hour or until firm. Delish!
