How to Make Perfect Brown Butter

  • To make classic browned butter, place your butter in a thick-bottomed saucepan or skillet, and place over medium heat.
  • Add the butter swirling the pan often and stirring with a whisk or rubber spatula, until the butter foams and turns a deep golden brown and has a nutty aroma – this process should take 3-5 minutes. Watch carefully as lightly browned specks begin to form at the bottom of the pan, as you don't want them to burn.
  • Remove the butter from the heat and pour into a bowl to stop the butter from cooking further.
  • Use browned butter immediately (you may need to cool it a bit before adding it to a batter) or store covered in the refrigerator for up to a week.
