Rainbow Rice Krispie Marshmallow Treats
Can we all agree, there's nothing better than "somewhere-over-the-rainbow" gooey marshmallowy cereal treats to make everyone smile and jump for joy! Made with Rice Krispies, Fruity Pebbles, lots of marshmallows and a few little extras, these are amazing as well as addictive. There's no place like home, like in home-made, right?

- 5 tablespoons salted butter if using unsalted, add 1/4 to 1/2 teaspoon salt when you add the vanilla
- 10 cups mini marshmallows divided, into 8 cups & 2 cups
- 4 cups Rice Krispie Cereal
- 2 cups Fruity Pebbles
- 1 teaspoon vanilla extract
Get Recipe Ingredients
Line 9x9 pan with parchment paper and spray with cooking spray. Set aside. (Use 8x8 pan for extra thick treats - 9x13 pan - double recipe)
Melt butter in a large Dutch oven or pot. Add 8 cups (16 oz) of marshmallows and stir until completely melted on low heat.
Remove from heat and add salt and vanilla
Add the Rice Krispies, Fruity Pebbles, and 2 more cups (2 & 1/2 oz) of marshmallows to melted marshmallow mixture to get the gooey marshmallow starting to melt and continue stirring to coat completely.
Pour mixture into prepared pan and press in evenly.
Add some extra marshmallows on top if you wish or you can also top with some melted white chocolate drizzles for some added fun!
Let set in pan for up to one hour before cutting into bars.
Store airtight at room temperature for up to 3 days, but Krispie treats are always best the first day.
9 - 16 servings depending on how you slice them .
Use other cereals if you wish.
For the 2 cups you add in at the end, use 2 cups of spring colored (pink, green, yellow) mini marshmallows instead of white for even more color!
