Instructions How to Make Reese's Pieces Oatmeal Cream Pie Bars
Preheat the oven to 325°F. Lightly grease an 8-inch square pan and line with parchment paper.
In a medium bowl, whisk together the dry ingredients of flour, salt, and baking soda until well-combined, set aside.
In another large mixing bowl, using a mixer, beat together the softened butter, brown and granulated sugars, cinnamon, ginger, and vanilla until it’s smooth.
Beat in the eggs one at a time, scraping the bowl between additions, so the mixture is thick and creamy.
Stir in the flour mixture just until combined, then add in the quick oats.
Transfer the oatmeal cookie dough to your prepared pan and smooth it into an even layer with an offset spatula.
Bake the oatmeal cream pie bars for 35 to 40 minutes, until the color is a deep golden brown and a toothpick inserted into the center comes out clean. Cool for 10 minutes in the pan on the wire rack, then lift out of pan and let cool completely on the wire rack. Once the bars are cooled, make the frosting!
How to Make Marshmallow Cream Frosting
Beat butter until fluffy.
Mix in the marshmallow fluff, powdered sugar, salt and vanilla and continue mixing on low to medium speed until mixture is light, gooey and creamy. If you want it stiffer, add a little more powdered sugar.
To make it festive, add some Reese’s pieces on top. Cut and enjoy!
