Instructions

Soft Batch Monster Cookies

  • Preheat oven to 350 F degrees.  Line cookie sheets with parchment paper.
  • In a large bowl, using a mixer, cream butter, peanut butter, then add the sugars and beat together until light and creamy for about 2 minutes or so.
  • Mix in the eggs and vanilla extract until combined.
  • In a separate small mixing bowl, whisk the flour, soda, and salt together.
  • Add the flour mixture to the peanut butter mixture, then add in the oats. Mix until combined.
  • Stir in the chocolate chips and m&m’s by hand with a wooden spoon or rubber spatula.
  • Use a 1/4 cup cookie scoop, scoop portions onto a baking sheet leaving 3 inches between each. Press some m&m’s & chocolate chips into the tops of each of the cookies. No need to chill for chewy monster cookies!  You can press the cookie dough balls down if you want less thick thick cookies as well.
  • Bake for 10-12 minutes and remove from oven. Cookies may not look done, but it’s better to have under-baked versus over-baked for the soft batch cookie effect!
  • Let cookies cool 5 minutes on the pan and then move them to a cooling rack.

Notes

More Variations

  • For other mix-ins for your monster cookies recipe, feel free to add in some raisins, dried cranberries, peanut m&m's, mini m&m's, Reese's Pieces, pecans, walnuts, peanuts, and so on!
  • Switch out the peanut butter for almond butter, cashew butter or whatever nut butter you need.  Make sure it's a creamy variety.
  • Chocolate chips are a must in my book, but you can also use peanut butter chips, white chocolate chips, butterscotch chips and milk chocolate chips anytime!
  • For oats, we used rolled oats because we love texture, but you could also use quick oats or a combination of rolled oats and quick oats.
  • If you prefer to use salted butter, just bump the salt down to 1/4 teaspoon!
